Description
The Dao Vua is a Vietnamese family of blacksmiths with history dating back to 1288.
World-over these knifes have a great reputation and popularity as they are still produced by hand, using traditional methods.
This Santoku type of knife is made of 5160 High Carbon steel, a low alloy high strength spring steel which is exceptionally resilient and tough. This keeps the knife sharper for longer than a stainless steel knife. For this reason, carbon steel knives are most commonly the professional chef choice. Note however that high carbon steel cannot be bent, unlike stainless steel, the tips of a carbon steel knife will break if you try and do something like remove a broken key from the key hole. (If this does happen, they can be sanded down and re-beveled.)
Not only does High Carbon Steel have the ability to keep its sharpness for longer than stainless steel but it also can be made exceptionally sharp, added to this, the sharpening of carbon steel blades are much easier that with stainless steel.
The Dau Vua family are known for producing solid high quality Chef Knives. It can last you a life time if you take care of it. The handles are also made of real wood, hence should not be left soaked in water for long periods.
Please Remember
– try not to leave the knife in water overnight or the wood could swell
– use a wood chopping board so that the blade stays sharp
